Watch the cobbler work for twenty minutes

Find hands that know a job — a cobbler at the bench, a tailor at the machine, a barber mid-fade, a barista who never looks down at the grinder. Say nothing for twenty minutes; somewhere around minute twelve a question will form that you couldn't have brought from home. When a gap opens between customers, ask it. 'Why do you do it in that order' gets a better answer than 'how long have you been doing this.'
